Capsicum-Paneer Uthappam / Pan cake

Yesterday, I felt like eating something a bit crunchy, chewy and spicy food. When I checked my fridge, luckily I had dosa batter, paneer (Indian cottage cheese) cubes, capsicum. I was happy to find the perfect match of ingredients to my taste buds.

I decided to call it vegetable-paneer uthappam/pancake. Here goes the recipe.












Ingredients:

Dosa batter – as required
Onion – 1 big finely chopped
Capsicum – 1 big finely chopped
 Paneer – crumbled into small chunks
Cumin Powder – ½ tsp
Red Chilli Powder – ¾ tsp
Oil/Ghee – 1 tbsp
Salt – to taste

Method:

Vegetable – Paneer Mix:

Heat 2 tsp oil/ghee in a pan; add onions and sauté till it cooks
Now add finely chopped capsicum, sauté and cook till it's done (should be a bit crunchy).
Add crumbled paneer, sauté, remove from heat and cool.

Dosa:

Heat the dosa pan until its just hot, take a ladle full of dosa batter spread it thick on the pan and pour a spoonful of oil/ghee on sides.
Take a tablespoon of vegetable mix and spread it onto the top of the dosa lighly.
Cover the pan and cook in slow flame for 5 to 10 mins or until dosa is cooked and crispier on the bottom.
For kids, you can add shredded cheese on top and cook until cheese is melt.
Now, serve the dosa hot with any choice of side dish you like.

Tips:

You can use appam kadai instead of dosa pan, as it helps to cover and cook the uthappam.
Use different colours of capsicum to attract your folks.
